Peanut butter cookies: A crunchy bit of goodness with tea or coffee

If you want a real midnight snack, bake some peanut butter cookies. They are the perfect way to have something to nibble on with your favourite cuppa.

Do you enjoy a cookie or biscuit with your favourite cup of tea or coffee? Or, do you just open the cookie jar and go to town on them? However you enjoy yours, these peanut butter cookies are the perfect next step. They are very simple to make and don’t take too long either. These cookies are crumbly and a bit chewy with that familiar peanut butter taste.

Peanut butter cookies tips

As with some cookie dough recipes, you can let this one rest in the fridge overnight which will help intensify the flavours. If you have a small ice cream scoop, it’s perfect to portion your dough properly. You can add crushed nuts into the dough and some coconut on top if you feel creative. They pair well with your favourite cup of coffee or tea.

Ingredients

  • ¼ ml sugar

  • 2 tbsp butter

  • ½ cup peanut butter

  • 1 egg

  • 2 tbsp milk

  • ½ cup flour

  • 1 tsp baking powder

  • ½ tsp salt

Method

  • Preheat oven to 190°C.
  • Cream sugar and butter in a bowl. Add peanut butter and beat well.
  • Beat·egg and milk together. Add to peanut butter mixture.
  • Sift flour, baking powder and salt. Add wet ingredients and beat well.
  • Use a spoon to drop balls of dough onto greased cookie sheet and bake in 190°C oven for 15 minutes.
