They are easy to make, especially if you spend Sundays in the kitchen preparing your meals for the week. These are soft, chewy cookies, filled with the flavour of peanut butter. Peanut butter lovers will go nuts for these cookies!

Ingredients

  • 2/3 cup 2/3 oats

  • ½ tsp ½ cinnamon

  • 1 tsp 1 baking powder

  • 1 large egg

  • 1 cup 1 peanut butter

  • 6 tbsp 6 light brown sugar

  • ½ cup ½ chocolate chips (optional)

Method

  • In a medium bowl, combine the oats, cinnamon, and baking powder.
  • In a separate bowl, beat the egg. Add the peanut butter and brown sugar and stir until combined.
  • Add the dry ingredients to the wet mixture and slowly stir until combined.
  • Fold in the chocolate chips.
  • Refrigerate the dough for 30 minutes.
  • While the dough is in the fridge, preheat the oven to 180°C.
  • Line a baking sheet with baking paper. Spoon out cookie mixture and flatten the dough with the back of a fork.
  • Bake for 10 minutes.
  • Allow the cookies to cool for 10 minutes on the baking sheet before transferring to a wire rack to cool completely.
