When you are at parties, snacks and sweet treats are important but sometimes you feel bad for having all of the sugar. These peanut butter and banana muffins will make you feel a bit better about that next one you grab from the snack table. If you’ve been baking lots of banana bread over the last few years, you’ll enjoy this interesting twist and combination of two great homemade recipes and enjoy every bite.

Peanut butter and banana muffins tips

The softer your bananas, the easier they will mash into the best texture. These rich chocolate muffins also have lots of chocolate chips too and you can also add some more peanuts or other nuts to the topping. To make your life even easier when baking, also line the muffin tin with paper muffin cups which also make them more presentable, especially for parties. They’re also great with a cup of coffee when you go to work int he morning.

Ingredients

  • 3 3 ripe bananas, mashed VERY well (basically blended)

  • 3⁄4 cup 3⁄4 brown sugar

  • 1 large 1 egg

  • 1⁄3 cup 1⁄3 unsweetened apple sauce

  • 2 tbsp 2 melted butter

  • 1⁄2 cup 1⁄2 peanut butter creamy

  • 1⁄2 cup 1⁄2 wholewheat flour

  • 1⁄2 cup 1⁄2 all-purpose flour

  • 1⁄2 cup 1⁄2 unsweetened cocoa powder

  • 1⁄2 tsp 1⁄2 salt

  • 1 tsp 1 baking soda

  • 1 tsp 1 baking powder

  • 1 cup 1 chocolate chips

Method

  • Preheat the oven to 180°C and position a rack in the center. Line a muffin tin with baking cups and set it aside.
  • In a large bowl mash the bananas with a fork or potato masher (mixing bowl and mix on low for a minute or so) then mix in the sugar, egg, applesauce, butter and peanut butter until combined. Stir in the flours, cocoa powder, salt, baking soda, and baking powder over the banana mixture.
  • Mix lightly with a rubber spatula to combine. Fold in chocolate chips. Do NOT over-mix!
  • Using a ice cream scoop or spoons, divide the batter between the prepared muffin cups and bake them for about 20 minutes until a toothpick inserted into the middle comes out clean.
  • Transfer them to a rack to cool.
  • Store muffins in an airtight container in the fridge for up to 3 days.
