It’s almost peach sesson again, so it’s time to prepare some recipes with the freshest ingredients. There are so many pie recipes and fruit is often used, but peaches are often overlooked. Our peach meringue pie is a great addition to any family feast or event with a dessert table. Fresh yellow peaches and your favourite jam add loads of sweetness to the party before its topped with decorative and light meringue.

Peach meringue pie suggestions

There are two ways to make this tasty dessert. You can either make a larger pie in a par-baked pie shell or make smaller individual desserts. For the small pies, dredge the peaches in the caster sugar and place them in ramekins or muffin tins before adding the meringues over the top. You can decorate the meringue on top and add some crushed nuts over top for some extra texture. Serve your peach meringue pie with a piping hot cup of tea.

Ingredients

  • 8 8 peach halves (canned)

  • ½ tsp ½ vanilla essence

  • 8 tsp 8 jam

  • castor sugar for dredging

  • 2 2 egg whites

  • 4 tbsp 4 sugar

  • Chopped nuts for decoration (optional)

Method

  • Filling:
  • Method:Put peach halves on cloth to drain.
  • Put drained peaches into pyrex dish or pie shell. Put teaspoon jam in bottom of each peach.
  • Meringue:
  • Put whites of eggs into basin and whisk until they form stiff peaks.
  • Add 2 tablespoons sugar and beat. Fold in other 2 tablespoons sugar with metal spoon. Add vanilla essence.
  • Top of the peaches with meringue to cover them completely.
  • Dredge with castor sugar thoroughly and sprinkle with chopped nuts.
  • Bake for 15 minutes in a 160°C oven.
