Ingredients

  • 2 medium 2 peaches

  • 3 medium 3 apricots

  • 1 cup 1 raspberries, fresh

  • 1 cup 1 blueberries, fresh

  • 1 cup 1 Greek yoghurt, low fat

  • 1 teaspoon 1 vanilla extract

  • 1 teaspoon 1 honey

Method

  • Place 1 cup of water and the honey in a small pot over medium heat. Stir until the honey has melted into the water.
  • Allow to simmer, uncovered, until liquid has reduced by half. Allow to cool. Add the vanilla essence once cooled.
  • Place another pot over a medium heat. Fill it halfway with water and bring to a boil.
  • Place the apricots and peaches into the boiling water for 60 seconds. Remove and place into a bowl of ice water.
  • Once the fruit is cooled, remove the skins and pips. Slice each fruit into six segments and set aside in a bowl.
  • Pour the warm syrup over the sliced apricot and peach segments and allow to cool.
  • Once cooled, mix the stone fruit and syrup with the berries.
  • To serve, divide into six portions and add one heaped tablespoon of yoghurt to each portion of fruit.
