Do you have hungry friends coming over for the big game this weekend? Or, do you want to cook prepare a tasty winter evening dinner for your family that doesn’t take too much effort? Other than stews and soups, casseroles are an easy way to make tasty meals and if you have leftovers, it’s even easier. Our party chicken casserole is a hearty pasta dish which will keep you warm during the winter months and feed your hungry guests.

Party chicken casserole tips

This recipe uses leftover chicken pieces but you can make it fresh too by pan-frying or roasting chicken pieces, including the white meat. Remember to mix the asparagus juice with your stock for extra flavour depth. Add a splash of spaghetti water to the stock too to help bind it. You’ll be making an easy white sauce or bechamel to cover and you can use a combination of cheddar and parmesan for the topping. You can easily adjust the recipe to accommodate more people.

Ingredients

  • 225 g 225 spaghetti

  • 125 g 125 butter

  • 1 litre 1 chicken stock

  • 1 pinch 1 nutmeg

  • 2 tbsp 2 dry sherry

  • ½ cup ½ fine, dry breadcrumbs

  • 2×225 g 2×225 tins of asparagus tips and juice

  • 1 cup 1 plain flour

  • ½ tsp ½ salt

  • freshly ground black pepper

  • 2 tbsp 2 whipped cream

  • 4 cups 4 diced cooked chicken

  • ½ cup ½ grated parmesan cheese

Method

  • Break spaghetti into short pieces and cook in salted boiling water until tender.Rinse and drain.
  • Drain asparagus tips and and cut into 2cm pieces. Keep the liquid.
  • Melt the butter in a saucepan with flour until flour smell goes away and keep whisking.
  • Add chicken stock slowly while whisking at a low simmer. (You don’t want to see bubbles)
  • Season to taste with salt, pepper and a pinch of nutmeg. Add cream and sherry.
  • Place spaghetti in a large greased oven-proof casserole dish. Cover with a little sauce and arrange chicken and asparagus on top.
  • Cover with the remaining sauce and top with breadcrumbs and cheese.
  • Bake at 180-190°C for 1 hour until golden brown.
