With less time to cook in the evening with busy schedules and power cuts, you don’t want recipes that take hours to cook. Air fryers have become especially popular here in South Africa for those reasons. Not only can you cut cooking time in half or more, but your recipes are often healthier and just as great, if not better than using your oven. This parmesan crusted chicken recipe is a great example of everything that’s great about your air fryer. The recipe was developed by Sinoyolo Sifo, a.k.a. Parmesan crusted chicken tips

This recipe is simple to put together and takes only about 5 minutes and having your chicken rest when covered in the spice paste is just optional but makes a difference. This recipe will also be even more simple when you have individual pieces as cooking a whole chicken needs the pressure cooker. If you only have an air fryer and chicken pieces, all you need is 15 minutes per side at 180°C and 200°C for about 3-5 minutes to finish off.

Air fryers are also 80% more energy-efficient than an oven and takes up less space.

Ingredients

  • 1 medium 1 whole chicken (about 1kg)

  • 45 ml 45 olive oil

  • 2 large 2 lemons, juice freshly squeezed

  • 45 ml 45 Weber lemon & herb chicken marinade

  • 1 tbsp 1 garlic salt

  • 1 1 tbsp paprika

  • salt and pepper, to taste

  • 50 g 50 parmesan cheese, grated

Method

  • In a small bowl mix together olive oil, lemon juice, garlic salt, paprika and lemon & herb marinade. Mix well until it becomes a paste.
  • Wash the chicken. Pat-dry the chicken using a paper towel. Season with salt and pepper. Coat the chicken with the paste mixture. Transfer into a large bowl, cover with cling wrap and let it rest for 2-3hours.
  • Put the chicken and a cup of stock in your Instant Pot Duo Crisp and close the pressure cooking lid. Turn the releases handle to seal. Switch on the pressure cooking function and cook on high for 20 minutes. When the 20 minutes is up, release the pressure seal.
  • Remove the chicken and clean the inner pot. Add in the Instant Pot stainless steel trivet and place the chicken on top of it, close the air fryer lid. Air fry for 15 minutes at 180°C. After 15 minutes increase the temperature to 200°C, sprinkle parmesan on the chicken and continue to air fry for 5 minutes (the chicken will be golden brown with parmesan crisp on the outside).
  • Place the chicken on a chopping board and let it rest for 5 – 10 minutes before cutting and serving.
