Paptert – A maize meal, bacon, mushroom and cheese bake

If you live in South Africa, you know how popular mieliepap is. Mieliepap is maize meal porridge and paptert is afrikaans for porridge tart. We promise that this recipe is a lot more than just maize meal with some extras thrown in. Paptert is a perfect side for your next braai as the summer months approach and is packed with everything you love.

Paptert is almost like a maize meal lasanga but a very South African version. All of the ingredients like bacon, mushrooms, onions, tomato and other aromatic herbs are added to this whole dish. You can definitely cook the maize meal beforehand and have it as your first layer. Layer all of the ingredients and place in the oven. You can even prepare it at home and bake it at your next venue if you are going to your friend’s braai. It’s not just a side as you can have it as breakfast on it’s own as well.

Do you know how simple it is to make this Mieliepap? Simpler than you think! A perfect side dish for a braai that is sure to impress.

Ingredients

  • 750 ml 750 coarse Maize Meal (or any other Maize Meal)

  • 250 ml 250 (1 cup) milk

  • 500 ml 500 (2 cups) water

  • 60 ml 60 (¼ cup) olive oil

  • 820 g 820 or x 2 tins of sweet corn

  • 2 cups 2 grated cheese (Mozarella is perfect)

  • Salt and freshly ground black pepper to taste

  • ½ ½ small onion, cut into thin wedges

  • 200 g 200 button mushrooms cut into thin slices

  • 10-12 sprigs of fresh thyme

  • Bacon strips (chopped)

Method

  • Stir in flour Maize Meal, milk, water, oil and sweet corn in a bowl and mix well
  • Add half of this mixture in the prepared oven dish, sprinkle with salt and pepper.
  • Sprinkle one cup of grated cheese over this mixture.
  • Add the remaining mixture on top of the cheese. Sprinkle onion and mushrooms all over the mixture, but do not stir.
  • Sprinkle with thyme and season.
  • Use the remaining cheese and sprinkle all over.
  • Add the cut bacon to the mixture and season
  • Place in a prepared ovenproof dish in a 180°C oven.
  • Bake for 1 hour or until cooked and golden brown

Notes

  • *If you don’t like the mushrooms, make a thick tomato and onion stew or Chakalaka,  place it on top of the mixture, sprinkle with a little cheese and bake as described. Pieces of fried bacon can also be added. This is optional
