We’ve been putting food between pieces of some sort of bread for thousands of years. Many cultures have some form of food that consists of something put inside or between pieces of bread or dough. Oriental Mushroom Tacos combines the delicious flavours from South-East Asia with the easy-to-handle form of flatbread from South America. It’s even vegan and vegetarian food choice friendly.

We put the mushrooms on the braai because cooking mushrooms on the flames like meat gives them that charred and even meatier flavour. If you’re hosting a braai, the fire is already going anyway. The incredibly rich and aromatic flavours from the filling are going to blow you away and the avo gives it some freshness as well. This delicious taco is like an easier way of having stir-fry. This recipe does take a bit of effort to prepare but is well worth it, especially for Taco Tuesdays or as a platter for your next braai this weekend.

Ingredients

  • 500 g 500 Button or Portabellini mushrooms (cleaned and threaded onto wooden skewers that have been soaked in water for 30 minutes)

  • OR
  • 4 large 4 Fresh Portobello (big brown) mushrooms

  • 3 tbsp 3 Korean barbecue marinade (available at Woolworths), or other barbecue marinade of your choice

  • 1 1 Baby cabbage, finely shredded

  • 1 1 Carrot, grated

  • ¼ ¼ Red onion, finely sliced

  • 1 tsp 1 Wasabi

  • 6 tbsp 6 High-quality mayonnaise

  • 4 4 Soft tacos (any flat-bread will work)

  • ½ ½ Avocado, sliced

  • 1 handful 1 Coriander leaves

  • Lemon wedges, grilled on the braai until caramelized, about 5 minutes

Method

  • Brush the mushrooms with the barbecue marinade and place straight onto a medium-hot braai, basting with more barbecue sauce as you go, and turning until mushrooms are cooked through, about 10 minutes.
  • Meanwhile, combine the cabbage, carrot, onion, wasabi and mayonnaise.
  • Toast soft tacos on the braai, a couple of seconds on each side. 4 Remove mushrooms from the braai, slice into thick strips, and divide between tacos. Top with slaw, avocado and coriander. Serve immediately with grilled lemon wedges.
