Whip together this quick and easy open wrap in about 20 minutes. Packed with delicious flavours, this tasty light meal will leave you satisfied.

Toast the open wrap slightly and then slather it with some of the cream cheese mixture.  Top with fried mushrooms and halloumi slices with some other mouth-watering ingredients and you are in for a taste sensation. Not to forget about the avocado pear slices adding healthy fatty acids to the mix.

Although this open wrap recipe does not contain any meat, mushrooms provide a meat-like texture. That is the great thing about adding mushrooms to your dishes. They make you feel full and satisfied without adding too many calories to the mix. They also provide a rich umami flavour to your meal.

Ingredients

  • 15 ml 15 olive oil

  • 300 g 300 big brown mushrooms, thickly sliced

  • 3 ml 3 paprika

  • 80 g 80 halloumi cheese, sliced

  • 160 g 160 smooth cream cheese

  • 30 ml 30 fresh herbs, such as parsley and coriander, chopped

  • 1 1 lemon, zest and juice

  • 4 -6 4 -6 wraps, toasted, if desired

  • 15 ml 15 parsley, chopped

  • salt and milled pepper

  • 1 1 avocado, sliced

  • 1 handful 1 rocket leaves

  • 45 ml 45 flat-leaf parsley, torn

Method

  • Heat the oil in a pan and fry the mushrooms and paprika for 4 – 5 minutes, or until the mushrooms are cooked. Set aside.
  • In the hot pan, fry the halloumi slices for 30 – 40 seconds per side and set aside.
  • Combine the cream cheese, herbs and lemon juice and zest in a small bowl.
  • To assemble, place a toasted wrap on a flat surface a spread some of the cream cheese mixture down the middle.
  • Top with the reserved mushrooms and halloumi cheese, and some avocado slices, rocket and micro salad leaves. Serve at once.

Notes

  • This would also make a good topping for lightly toasted Low GI slices of bread for a healthy and hearty breakfast or lunch.
