South Africa has some incredible produce and we can sometimes forget that. We have high quality vegetables and you can find some great pumpkins around at your local store. If you have friends coming over for a big feast or just want some soup for lunch or dinner, our old-school pumpkin soup is for you. It’s a creamy, iconic soup recipe, perfect for nights in with the family during the cold winter evenings.

Old-school pumpkin soup suggestions

The recipe is simple and it gives you a base to create something even tastier. Add some crispy bacon bits into the soup as a garnish for some texture. If you want some heat and spice, add some nutmeg and chili flakes to give it a boost. If you already enjoy them, why not bring some toasted pumpkin seeds to the party too? Serve with fresh cream, any of your creative additions and some garlic bread or toasted cheese sandwiches.

Ingredients

  • 1 kg 1 pumpkin cubes

  • 2 large 2 onions, chopped

  • salt and freshly ground black pepper

  • warm water to cover or chicken stock

  • butter

  • olive oil

  • cream

  • Garnish (optional)
  • cream

  • toasted pumpkin seeds

  • Bacon bits

  • chili flakes

Method

  • In a large saucepan, boil the pumpkin with just enough water or chicken stock to cover it.
  • Liquidize with immersion blender or transfer to a blender in batches with some water until you have your preferred consistency.
  • Serve while hot with cream and croutons.
