Some people may believe that certain ingredients are only capable of becoming certain dishes and I think potatoes is one of those ingredients. Alas, this is not the case. These stuffed potatoes make for a spectacular side dish or can even be served as an entree.

With so many possibilities these Stuffed Potatoes really stand out as an elegant dish, that is not only visually appetising but works well on the palate too. There is a stunning combination of lamb mince, garlic and mushrooms of course!

In celebration of National Baked Potato Day tomorrow, August 19 we’ll be sharing some excellent baked potato recipes for you to choose from, ogle and enjoy!

Less is more with this recipe for stuffed potatoes! This dish is lightly stuffed with mince and mushrooms, making it a dish worth ogling.

Ingredients

  • 4 large potatoes, steamed until tender

  • 50 ml 50 olive oil

  • 1 onion, finely chopped

  • 250 g 250 lean lamb mince

  • 250 g 250 button mushrooms, chopped and pan fried

  • 2 carrots, peeled and grated

  • 1 tomato, cubed

  • 10 ml 10 tomato paste

Method

  • Hollow out the potatoes and set the filling aside.
  • Heat the oil in a sauce pan and add the onion and fry until glossy. Add the mince and allow to brown.
  • Add the mushrooms, carrots, tomato and tomato paste. Season to taste with salt and black pepper
  • Fill the potatoes with the filling and place onto a baking sheet and place into a preheated oven for 10 minutes at 180 degrees
  • Serve while still hot.

Notes

  • Cooks tip: Use the filling to make croquets, Mush the potato, add 100ml grated cheese, 20ml grated parmesan cheese, 1 egg yolk and season with salt and black pepper. Form into small cylinders. Dip in egg them bread crumbs then shallow fry.
