You always see them in the display at the bakery section of the supermarket, chocolate eclairs with lots of cream and chocolate. However, every time you buy one, it’s actually disappointing with stale pastry and cream that just doesn’t taste right. Well, you can make your own homemade chocolate eclair sandwiches which taste like they should but with a crunchy cookie base. The hardest part of making them is not to eat all of the ingredients before actually making them.

Homemade chocolate eclair sandwiches tips

The vanilla pudding and cream filling tastes just like the custard filling from the shops and you can use powdered custard too if you want to, but it wont set as perfectly. When making the chocolate topping, you can also add some coconut or nuts to the party if you’re feeling creative. Tennis Biscuits are a classic base for tarts made in South Africa and they will be just as perfect here. You can make your own choux pastry with the same filling for real eclairs too.

Ingredients

  • 32 32 Tennis Biscuits (1½ packets)

  • 1 packet 1 instant vanilla pudding

  • 200 ml 200 cream (cold)

  • 250 ml 250 full-cream milk (cold)

  • For the topping
  • 200 ml 200 cream

  • 2 cups 2 dark chocolate chips

Method

  • On a tray, pack and space16 biscuits.
  • Mix the pudding, cream and milk to a thick consistency.
  • Using a piping bag, fill it with the mixture.
  • Pipe it on the biscuit, filling it from side to side. Repeat on all the biscuits.
  • Place another biscuit on top of the filling, creating a biscuit.
  • Refrigerate.
  • In a saucepan, heat the cream until it boils. Add the chocolate. Stir until the chocolate is melted.
  • Scoop spoon fulls over the eclair sandwich, let it drip from the sides.
  • Refrigerate for ANOTHER 15 minutes.
