The holidays are all about eating everything you can, especially when it’s sweet and decadent. However, not everybody want’s to bake a cake and there are so many good ones that we love during the festive season. Our no-bake carrot cake bites with cream cheese topping are quick to put together and easy to enjoy when you’re being social with friends. Not only are they tasty, but you can decorate them as you want to.

No-bake carrot cake bites tips

Carrot cake is often enjoyed during the festive season but we don’t always want a big slice of cake. This recipe has the aromatic spices like cinnamon, nutmeg and allspice you know and love with a smooth cream cheese frosting we all love. We think the ratio is even better with less cake and more icing. They’re easy to decorate with your kids too and will make great decorations and snacks during the holiday celebrations.

No-bake carrot cake bites recipe

Looking for a sweet treat but not in the mood to wait? This is a great recipe to curb that craving in 20 minutes.

Ingredients

  • 1 cup 1 carrots, peeled and grated

  • 1 cup 1 dates, pitted

  • 1 cup 1 walnuts or pecan

  • 1 tsp 1 cinnamon

  • 1⁄2 tsp 1⁄2 ground ginger

  • 1⁄8 tsp 1⁄8 nutmeg

  • 2 tsp 2 vanilla essence

  • 6 tbsp 6 coconut flour, or use normal flour

  • For the Cream cheese topping
  • 1 cup 1 cream cheese

  • ¼ cup ¼ icing sugar

  • 1 tsp 1 vanilla essence

Method

  • Add the dates to a food processor (or blender) and pulse until finely chopped. Remove from the food processor
  • Add the grated carrot, walnuts, spices and vanilla essence to the food processor and blend until the nuts are fine.
  • Add the dates back in and blend for a few seconds till the mixture is combined.
  • Add the flour and blend for a few seconds until the mixture is crumbly. If the blender or food processor starts getting a bit stuck, remove the lid and help the mixture with a spoon.
  • Scoop out the mixture and roll into golf ball size balls.
  • Roll in coconut or top with cream cheese icing.
  • For the cream cheese topping
  • Beat the cream cheese with a whisk. Add the icing sugar and beat well. Add vanilla essence and mix.
  • Dip the carrot cake bites into the cream cheese mixture and refrigerate.
