Mother’s Day is just around the corner. Dad and the kids are probably already wondering what they can do to make it a really special day for Mum. These mushroom, halloumi and yellow pepper skewers are a quick and easy snack the kids can prepare themselves for Mum and then Dad can just grill them to a crispy perfection on the braai.

This delicious mushroom, halloumi and yellow pepper skewers recipe is kid-approved and simple enough for kids to engage in this activity themselves. Depending on the age of your children, you may need to keep a watchful eye.

Ingredients

  • ¼ cup ¼ (60 ml) olive oil

  • 1 punnet 1 (20 g) fresh mint leaves (save a few leaves for garnish)

  • 1 punnet 1 (20 g) fresh parsley

  • 1 clove 1 garlic, finely grated

  • grated rind & juice of a lemon

  • salt and pepper

  • 250 g 250 portabellini mushrooms, whole or halved

  • 250 g 250 halloumi cheese, cubed

  • 2 medium 2 yellow peppers, sliced into squares

Method

  • Salsa Verde
  • Put the olive oil, mint, parsley, garlic, lemon rind & juice and some salt and pepper into a small blender.
  • Blend to a smooth pulp.
  • Cover and refrigerate until ready to serve.
  • Skewers
  • Assemble the skewers by arranging chunks of mushrooms, halloumi and yellow pepper together.
  • Braai over hot coals or bake in a very hot oven at 220°C for about 10 minutes until golden.
  • Drizzle with salsa verde en serve at once.
