It’s always a good idea to have snacks when your friends come over. This mushroom bruschetta recipe is exactly what you need at your braai.

We are still hosting all of our favourite people on the weekends, which also means that there will be lots of food. If you’ve got a feast planned, you should definitely start with some mushroom bruschetta grilled on the braai. Bruschetta is an Italian dish that basically consists of some sliced bread spread with olive oil and maybe some herbs. However, the mushrooms add a meatiness along with flavours from the garlic and selected herbs.

The combination of the toasted ciabatta or sourdough bread topped with meaty garlic mushrooms smothered in melted cheese is absolutely divine. Preparing these tasty appetizers on the grill adds a delicious smoky flavour to the snack. These treats are a great snack when your friends get a bit hungry before the main braai, especially when they are still warm and served with a bit of fresh parsley. The cheese is also up to you if you can’t find Gruyere, in which case mozzarella also works wonders.

Ingredients

  • 8 8 slices bread of choice (ciabatta & sourdough work well)

  • 2 2 shallots, finely sliced

  • 2 clove 2 garlic, minced

  • 250 g 250 baby button mushrooms, sliced in half

  • 250 g 250 portabellini mushrooms, sliced

  • 1 cup 1 Gruyere cheese, grated (125 g)

  • olive oil

  • salt and pepper, to taste

  • fresh parsley, for serving

Method

  • Prepare the braai
  • Brush the slices of bread with a little olive oil and toast on the braai until golden brown on both sides. Set aside.
  • In a cast iron pan directly on the fire, heat a drizzle of olive oil. Add the shallots and cook until tender and starting to caramelise. Add the garlic and cook for a minute.
  • Add the sliced mushrooms and cook stirring occasionally, until browned all over. Season the mushrooms with salt and pepper and remove from the heat.
  • Place the toasted bread onto a baking tray. Spoon the mushroom mixture onto each slice and sprinkle with cheese.
  • Place the tray on the grill and cover with the lid for 2 minutes or until the cheese has melted.
  • Transfer to a platter, sprinkle with fresh parsley and serve.
