A scrumptious, crowd-pleasing side dish for your next braai. This tray bake of baby potatoes with mushrooms and broccolini soaked in garlic butter is what inspires us to keep creating food.

Not only does it look so incredible, it also tastes fabulous! Then again, doesn’t anything with garlic butter just taste divine?

Just look at it, isn’t that enough to make you want this dish right now? This tray bake of baby potatoes with mushrooms is yummy!

Ingredients

  • 700 g 700 to 1kg baby potatoes

  • 125 g 125 butter, melted

  • 30 ml 30 olive oil

  • 1-2 cloves garlic, finely chopped/grated

  • rind of a small lemon, finely grated

  • fresh parsley, a generous handful finely chopped (save half for garnish)

  • salt and pepper (to taste)

  • 250 g 250 portabellini mushrooms (minimum)

  • 200-300 g broccolini spears

  • olive oil, for drizzling

Method

  • Place the potatoes in a large pot and cover with salted water. Bring to a boil and cook until tender. Drain and set aside.
  • Make the garlic butter drizzle: mix the butter, oil, garlic, lemon rind, parsley in a medium jug/bowl, and season with salt & pepper. Set aside.
  • Arrange the potatoes in a large oven tray, then use the back of a spoon to gently crack them.
  • Add the mushrooms and broccolini, then drizzle with the butter mixture and season with salt & pepper.
  • Bake in a preheated oven at 220 C for 15 minutes or until the potatoes are golden brown.
  • Scatter with parsley and serve at once.
