Mushroom biltong: A great snack for vegetarian South Africans

Everybody should enjoy more tasty spins on iconic South African foods, just like this vegetarian-friendly mushroom biltong.

South Africa, just like so many countries has some great cuisine and our snacks are some of the best, like biltong. However, not everybody likes meat, but there’s an alternative to biltong for you. This mushroom biltong is a cured mushroom snack that’s perfect to nibble on during the day and at parties while watching the big game with friends. They have a great texture along with some spicy, smokey and slightly sweet flavours that all come together very nicely.

Mushroom biltong suggestions

Mushrooms are stacked with important nutrients like protein and fibre. They are a perfect umami ingredient and, adding some paprika and tamari adds a salty, spicy taste to your biltong. We would recommend that you have some sort of food dehydrator at your disposal but it is possible to use a very low oven if it has a low enough setting. Serve it alongside your vegetarian fried cauliflower bites, vegetables and dip and any other tasty treats you can come up with.

Ingredients

  • 8 8 portobello mushrooms

  • 2 tbsp 2 tamari

  • 1 tsp 1 apple cider vinegar

  • 2 tbsp 2 maple syrup

  • 1 tsp 1 smoked paprika

Method

  • Slice mushrooms (thick).
  • Combine all ingredients.
  • Marinate mushrooms for 2 – 4 hours.
  • Place mushrooms on a dehydrator tray.
  • Dehydrate mushrooms for 6 – 8 hours (or until as dry as you prefer).
  • Can be kept for up to 2 weeks.
