When you want a lovely salad for lunch, dinner or as a side, you often forget that it doesn’t always need to be a green salad. Salads are a great way to eat the healthiest food that will keep you nourished and energized. Our mushroom and herb salad is meaty thanks to mushrooms and light thanks to no starches or heavy ingredients. It’s a recipe that can be enjoyed by anybody following a vegan and vegetarian diet or just want to cut out meat for certain meals.

Mushrooms aren’t just packed with important vitamins and minerals, but they are high in dietary fibre. The dressing is very light and adds some mild sweet and tangy flavours that go very well with the mushrooms. You can definitely enjoy button mushrooms when raw but you can also cook them if you want to. Serve your salad as a whole meal or a s a delicious side to any weeknight meal with your family.

Mushroom and herb salad recipe

Ingredients

  • 1 punnet button mushrooms

  • 4 tbsp lemon juice

  • For the dressing
  • 4 tbsp olive oil

  • 2 tbsp tarragon vinegar

  • 2 tbsp fresh chopped chives

  • 2 tbsp fresh chopped parsley

  • ½ tsp dried tarragon

  • ½ tsp sweet basil

  • ½ tsp salt

  • freshly ground black pepper

  • 1 tsp sugar

  • 1 tsp hot mustard

Method

  • Wipe down the button mushrooms and trim the stalks.
  • Mix with 4 tablespoons of lemon juice. Leave to rest while making the dressing.
  • For the dressing
  • Mix all of the dressing ingredients together and mix well. Season to taste.
  • Mix with the mushrooms and let it rest and absorb for a while.
