Mixed vegetable chips: When you’re in need of a guilt-free crunchy snack

When it’s snacktime, you want something delicious you can enjoy without the guilt. Classic mixed vegetable chips are your road to healthy goodness.

When the days are long, you get hungry but still check your food intake. Chips are a great snack but they are fraught with guilt due to the salt and carbs. There is a way to eat your chips and still enjoy them. These mixed vegetable chips are low-cal and perfectly tasty. These snacks are great during your long workday or even as a game day snack when all of your friends are over.

The beetroot chips still have nitrates which are great for blood circulation and getting oxygen to the body and brain. Carrots and zucchini are classic veggie chip ingredients and you can still fill it up with potato chips. Use a mandoline slicer for thin slices and in a baking tray, flatten them with another tray so they don’t curl up too much. You can even make these tasty chips in your air fryer on the same heat setting but in about half the time. Enjoy with hummus dip!

Ingredients

  • 350 g Diced zucchini

  • 1 large Diced carrot

  • 1 large Diced potato

  • 1 large Diced tomato

  • 1 medium Diced beetroot

  • 1 tbsp Extra virgin olive oil

  • 1 pinch Salt

  • 1 pinch Ground black pepper

Method

  • Preheat the oven to 180°C.
  • Wash and dry the zucchini, carrot, potato, tomato and beetroot into thin slices.
  • Place onto a baking sheet and dab until fully dry.
  • Drizzle the olive oil over the veggie chips, as well as the salt and pepper.
  • Place into the oven for approximately 30 minutes or until golden and crispy.
  • Serve.
