We all love dessert and when we get our favourites in mini form, it just makes us happier. Trifle is one of those holiday desserts that so many of us enjoy and the layers of textures is a party all on its own. These mini strawberry cake trifles are great for South African summer weekends and Christmas parties. The recipe is also so simple, that you can get creative and put your own spin on this classic treat.

This mini strawberry cake trifles recipe is summer layered in all its glory, brimming with sweet strawberries, freshly baked cake and honey-whipped cream. You can use any type of fresh cake you want to and even experiment with chocolate cake if you want to. You can make more layers with custard and use different fruits too. The colours fit with the holiday season and you’ll want them as your dessert table centre-piece.

Ingredients

  • 500 g 500 strawberries, washed (I used a whole tray)

  • 2-3 tbsp 2-3 granulated sugar; more to taste (depending on how ripe the strawberries are)

  • 5-6 cups 5-6 fresh baked cake, cubed into 2cm pieces

  • 1 1⁄2 cups 1 1⁄2 heavy whipping cream

  • 2 tbsp 2 granulated sugar

  • 4 tbsp 4 honey

Method

  • For the strawberries
  • Place one-third of strawberries in a bowl, using a potato masher, mash into a chunky puree.
  • Slice the remaining berries and stir into mashed strawberries.
  • Add the sugar and stir to combine. Set aside at room temperature for a least 30 minutes.
  • For the honey whipped cream
  • Pour the heavy cream into a chilled bowl. Beat until whip cream starts to thicken. This should take about 2 minutes on medium setting of a stand mixer a little longer with a hand mixer.
  • Turn off the mixer and add the honey. Resume beating on medium speed until soft peaks hold, about 2 to 3 minutes more.
  • Assembly
  • Evenly divide all ingredients among 8 serving glasses and layer with cake, whipped cream and strawberries.
