Wake up to the delicious smell of freshly baked mini quiches cooking to a beautiful golden brown in the oven. These piquant bites are just what you need to start your day strong and full of energy.

These mini quiches are loaded with steamed broccoli, grated zucchini and chopped ham. Topped with a droplet of cream cheese and you have a fantastic breakfast to serve.

This recipe is enough to serve four people, so just perfect for a family breakfast. The best part is that if you are monitoring your calorie intake, this recipe is exactly what you need. Each serving contains only 112 calories. So, no need to worry that these tasty quiches will jeopardise your eating plan. It may feel as if you are cheating though. That is how appetising these mini quiches are!

  • 4 large 4 eggs

  • 150 g 150 finely chopped rosa tomatoes

  • 50 g 50 steamed broccoli

  • 50 g 50 steamed grated zucchini

  • 10 g 10 cream cheese garnish

  • 60 g 60 ham pieces, chopped

  • 1 pinch 1 of salt

  • 1 pinch 1 of pepper


  • Preheat the oven to 180°C.
  • Chop the tomatoes into small pieces.
  • Chop/grate and steam the broccoli and zucchini until partially cooked.
  • Crack all the eggs into a medium bowl, add the steamed broccoli, zucchini, rosa tomatoes and ham pieces and mix well. Spice with salt and pepper.
  • Grease a cupcake tray with cooking spray.
  • Place the mixture evenly into the 4 holders and place into the oven until fully cooked.
  • Serve warm with a dash of cream cheese as garnish.
