Are you in the mood for cake but it’s midnight and you don’t have any in the fridge? Well, you can make a cake in less than twenty minutes and enjoy a rich and sweet treat whenever you want to. This microwave chocolate cake is a pantry dessert that will keep everybody happy and change your life forever. It’s like a chocolate brownie and you can even get creative with the ingredients and the topping any time of the day.

Microwave chocolate cake tips

The recipe does include some coffee which always lifts the chocolate taste without becoming a mocha or coffee cake. However, you’re welcome to adjust the coffee content to your personal preference. To make brownies: while the cake is still warm, heat 1 cup milk with 2 teaspoons cacao, 1 teaspoon butter with 1 tablespoon honey in the microwave. Pour it over the cake while still warm. You can also top it with some crushed nuts or fruit.

A moist delicious chocolate cake that is ready in under 20 minutes.

Ingredients

  • 1 cup 1 cake flour

  • 2 2 eggs

  • 3 tbsp 3 cacao powder

  • 3 tsp 3 baking powder

  • ¼ cup ¼ coconut oil

  • 1 cup 1 hot water, add 1 tablespoon coffee

  • pinch of salt

  • 4 tbsp 4 brown sugar

Method

  • Spray a medium microwave-safe bowl with non-stick spray and set aside.
  • In a mixing bowl, combine the following: Sifted flour, baking powder, salt, and cacao
  • Sprinkle sugar on top, do not mix
  • Make a hole in the middle and pour in the beaten eggs, fold carefully
  • Pour hot water with dissolved coffee and coconut oil over the mixture. Fold carefully until mixture is smooth. If using a whisk, do not whisk, use as a spoon to fold the mixture.
  • Cover and cook in the microwave on high for 6 minutes, or until cake springs back when touched. Since microwaves cook differently, adjust the cooking time accordingly.
  • Eat warm from the oven or let it cool and ice with your choice of icing.

Notes

  • To make brownies: while the cake is still warm, heat 1 cup milk with 2 teaspoons cacao, 1 teaspoon butter with 1 tablespoon honey in the microwave. Pour it over the cake while still warm.
  • TIP:  Add 1 teaspoon vinegar to take away baking powder taste.
