Mexican chicken quesadilla: Something fun for dinner

You were always told not to play with your food, but what if you had a dish that’s so fun to make that if feels that way? Cooking should be fun and so too when it comes to eating really tasty food which is why you need to make this Mexican chicken quesadilla. Quesadillas are two tortillas traditionally filled with cheese but they now often have meats and vegetables added before being toasted on both sides. Because of all of the filling options, the “play with your food” fun can begin when you choose what to include. We will get you started with this recipe.

Mexican chicken quesadilla suggestions

You can either grill some chicken breasts, use leftover chicken or buy some at the store for this recipe. The veggies like onions are a great start but some stir-fried green and red peppers add another tasty and healthy option for this meal. If you want a bit more spice, some chilli flakes or hot sauce makes a big difference. Lightly fry the sandwiched tortillas in a hot pan before cutting it into servings for everybody as you make the next one. Quesadillas are often served with guacamole and cream cheese.

Mexican chicken quesadilla recipe

Ingredients

  • 2 2 tortilla wraps

  • 120 g 120 mozzarella loaf, grated

  • 120 g 120 cheddar cheese, grated

  • 2 2 chicken breasts

  • 2 tbsp 2 paprika

  • 50 ml 50 cream

  • ¼ ¼ cucumber chopped and seeded

  • ½ ½ red onion chopped

  • 1 1 tomato, chopped and seeded

  • 1 tsp 1 butter

Method

  • Cut chicken breast into small pieces.
  • In a hot pan, drizzle oil and add chicken.
  • Stir pan to ensure chicken cooks evenly.
  • Add paprika and cook for a further 5 minutes.
  • Add cream and allow flavors to infused for 3 minutes, season with salt and pepper and remove from heat.
  • In a large non-stick pan, melt half the teaspoon of butter on a low heat.
  • Place 1 Tortilla in the pan and add half Mozzarella and cheddar, evenly covering the base of the tortilla.
  • Top with chicken and add the rest of the cheese.
  • Cover with second Tortilla and slowly toast for 2-3 minutes.
  • Carefully flip the Tortilla to toast the top Tortilla.
  • Toast for about 2-3 minutes.
  • Check if cheese has melted.
  • Carefully slide the Tortilla out of the pan onto a cutting board and cut into 8 triangles.
  • In a mixing bowl, add tomatoes, cucumber and red onion. Season with salt and pepper and drizzle with olive oil.
  • Spring salsa over the top and serve with guacamole.
