Do you remember Sunday lunch at grandma’s house? Do you remember the dessert after the feast of roast beef, crispy potatoes and colourful vegetables? Chances are high that dessert was malva pudding with homemade custard. Malva pudding is a soft, cake-like pudding with apricot jam which is served warm and covered in custard, ice cream or both. If you want to surprise your family, this dessert is the best way you can do that this winter.

The malva pudding is made with all of the best dessert ingredients like butter, apricot jam and sugar with the other usual cake ingredients. Apricot jam is a favourite of South Africans and grandma probably made her own, but you can use store-bought too. The custard isn’t a traditional custard but a custard-like sauce made with eggs, vanilla, butter, sugar and cream. The combination of warm pudding and ice cream is a great combination that will send your taste buds into overdrive

Ingredients

  • Malva pudding:
  • 180 g 180 sugar

  • 2 large 2 eggs

  • 1 tbsp 1 apricot jam

  • 150 g 150 all-purpose flour

  • 1 tsp 1 bicarbonate of soda

  • ½ tsp ½ salt

  • 1 tbsp 1 butter

  • 1 tbsp 1 vinegar

  • cup milk

  • custard sauce
  • ¾ cup ¾ cream

  • 100 g 100 butter

  • 100 g 100 sugar

  • cup hot water

  • 2 tsp 2 vanilla essence

Method

  • Preheat the oven to 180°C.
  • Grease an oven dish (18 × 18 × 4½ cm).
  • Beat the eggs and sugar using an electric mixer, until thick and pale yellow colour.
  • Melt the butter, add butter and vinegar and jam to the eggs.
  • Sift the dry ingredients and add to the eggs mixture followed by the milk. Beat well.
  • Pour into the prepared ovenproof dish.
  • Bake until golden brown, 30 – 45 minutes.
  • For the sauce:
  • Place all the ingredients in a pot and heat until all melted. Pour over the pudding as soon as it comes out of the oven.
  • Serve warm with custard or ice cream.
