Ever tried a maize citrus cake? It’s fruity, tasty and packed with flavour. Ready in less than an hour, this delightful cake is a must-try. Every busy individual who loves making time to whip together a delicious cake will agree with that.

This maize citrus cake contains oranges and naartjies. This results in a burst of strong citrus flavours with each bite. Remember to soak the naartjies and oranges in a simple syrup to enhance the sweet fruity flavours. After some time, layer the soaked fruit on the bottom of a baking tray. Next, the maize meal batter is poured on top of the fruit.

Ingredients

  • Cake
  • 165 g 165 butter

  • 225 g 225 sugar

  • 4 4 eggs

  • 200 g 200 maize meal

  • 1 tablespoon 1 baking powder

  • 1 tablespoon 1 vanilla essence

  • 100 ml 100 milk

  • ¼ cup ¼ oil

  • 3 3 oranges

  • 2 2 naartjies

  • Syrup
  • cinnamon sticks

  • 1 cup 1 water

  • 1 cup 1 sugar

Method

  • Preheat the oven to 180°C.
  • Grease a 23 cm cake tin and line with greaseproof paper.
  • Peel and slice the oranges and naartjies.
  • Make a simple syrup with 1 cup sugar and 1 cup water, add cinnamon sticks.
  • Let the fruit soak in the syrup.
  • Using an electric beater, beat butter and sugar until pale.
  • Add the eggs and continue beating.
  • Add the maize meal and baking powder.
  • Add the milk, oil and vanilla.
  • At the bottom of the cake tin, place the soaked fruit. Try to cover the whole surface.
  • Pour cake batter on top of the fruit.
  • Bake for 35 minutes.
  • Allow cooling. Serve by turning the cake upside down and add more fruit on top if desired.
