A frittata is an Italian dish that brings together an omelette and a quiche for a very healthy meal. The difference between this and a quiche is that all of the ingredients are pre-cooked before sticking the frittata into the oven. You’ve got loads of protein and fats from the eggs while the peppers provide good amounts of Vitamins while mushrooms add a meatiness and fibre to your daily nutrients. Each serving is only 274 calories!

Ingredients

  • 1 tsp 1 extra virgin olive oil

  • 4 tbsp 4 red onion, chopped, small dice

  • ½ cup ½ button mushrooms, sliced thinly

  • ½ clove ½ fresh garlic, crushed

  • 1 small 1 red bell pepper, sliced

  • 2 medium 2 eggs

  • 1 pinch 1 salt

  • 1 pinch 1 black pepper, ground

  • 1 cup 1 cherry tomato, raw, chopped

  • cup milk, low fat

  • 2 2 basil leaves, fresh, chopped finely

Method

  • Preheat oven to 220°C (430°F).
  • Heat half the oil in a medium, oven-safe frying pan. Add onion and pepper and cook over medium heat for 5 minutes, stirring frequently. Add the mushrooms, cover, and cook for 3 minutes, stirring several times. Add garlic and cook for 1 minute.
  • Remove vegetable mixture from heat, and transfer to a plate to cool briefly. Wipe the pan with a paper towel, and return to the stove.
  • Combine the eggs, milk, salt, pepper, and basil in a large bowl, and whisk together.
  • Heat the pan over a medium heat for 2-3 minutes and add the remaining oil. Add vegetables to the egg mixture in the bowl, stir, and carefully pour the entire mixture into the pan. Scatter the cherry tomatoes over the egg mixture (do not stir).
  • Cook frittata gently over a medium-low heat for 15 – 18 minutes or until it is cooked most of the way through.
  • To finish cooking the top, put the oven on grill, and place frittata in the oven for 5 minutes (watch to ensure that it doesn’t burn). Remove frittata from the oven and allow to cool in the pan for 5 minutes before serving.
