With the cooler months rolling along, citrus is becoming even more popular. Some of us might have complicated relationships with lemons and their sourness, but put it into a cake and you’ve got the perfect tea or coffee treat out there. This lemon cake with lemon icing is a light and fluffy sweet cake that pairs very well with your favourite hot drink. The addition of the citrus is still fresh and zesty with a light glaze icing to top it off and decorate.

Lemon cake with lemon icing tips

The lemon cake is so easy to make and when you have fresh lemons, make it even sweeter without adding the sourness to the cake. You can bake it in any shape you want but most often it’s baked as a loaf with slices. But you can also turn it into a layer cake with the icing between and on top of the cake. If you’re feeling adventurous, you can also turn this lemon cake into an orange cake. It will all make up for the fruit the kids get from the neighbour’s tree.

  • For the lemon cake
  • 1 ½ cups 1 ½ flour

  • ½ tsp ½ baking soda

  • ½ tsp ½ baking powder

  • ½ tsp ½ salt

  • 3 whole 3 eggs

  • 1 cup 1 sugar

  • 2 tbsp 2 soft butter

  • 1 tsp 1 vanilla essence

  • 1 tsp 1 lemon zest

  • cup lemon juice

  • ½ cup ½ coconut oil

  • For the lemon icing
  • 1 cup 1 icing sugar

  • 2 tbsp 2 milk

  • 1 tsp 1 lemon juice


  • Preheat oven to 180°C.
  • Prepare baking tin, +- 13cm x 23cm, line it with baking paper and spray with Cook and Spray. 
  • Sift the flour, baking soda, baking powder and salt and add to a medium mixing bowl.
  • Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon zest and lemon juice.
  • Pour wet ingredient into the dry ingredients and blend carefully until smooth.
  • Add oil and mix well.
  • Pour batter into a well-greased loaf pan.
  • Bake for 45 minutes or until a toothpick stuck into centre of the cake comes out clean.
  • For the lemon icing
  • Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
  • While the loaf has cooled off, remove it from pan and frost the top with the icing.
  • Let the icing set before slicing.
