Is what you’re looking for something light and fresh that will compliment the taste of your favourite hot beverage? This Lemon Cake recipe is all of those things and more. It’s even tastier than a coffee shop lemon loaf.

We all have a complicated relationship with lemons being sour but the perfect lemon loaf is zesty, sweet, fluffy and covered in soft lemon icing. It is a great recipe for anybody who is new to baking and wants to make something special. As it is the end of the citrus season in South Africa, it’s time to add some fresh fruit to the perfect slice, for a snack that is out of this world.

Lemon cake goes great with your choice of coffee, tea, (hot or iced) and can be served as a dessert too.

  • 1 ½ cups flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 3 whole eggs

  • 1 cup sugar

  • 2 tbsp soft butter

  • 1 tsp vanilla essence

  • 1 tsp lemon zest

  • cup lemon juice

  • ½ cup coconut oil

  • 1 cup icing sugar

  • 2 tbsp milk

  • 1 tsp lemon juice


  • Preheat oven to 350°F /180 °C.
  • Prepare baking tin, +- 13cm x 23cm, line it with baking paper and spray with Cook and Spray. 
  • Sift the flour, baking soda, baking powder and salt and add to a medium mixing bowl.
  • Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon zest and lemon juice.
  • Pour wet ingredient into the dry ingredients and blend carefully until smooth.
  • Add oil and mix well.
  • Pour batter into a well-greased loaf pan.
  • Bake for 45 minutes or until a toothpick stuck into centre of the cake comes out clean.
  • Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
  • While the loaf has cooled off, remove it from pan and frost the top with the icing.
  • Let the icing set before slicing.
