Ingredients

  • BASE
  • 500 ml 500 cake flour

  • 10 ml 10 baking powder

  • 140 ml 140 soft butter (unsalted)

  • 125 ml 125 sugar

  • 1 large 1 whole egg

  • salt

  • FILLING
  • 200 ml 200 melted apricot jam

  • TOPPING
  • 3 3 egg whites

  • 300 ml 300 caster sugar

  • 250 ml 250 diced coconut

  • 5 ml 5 vanilla essence

Method

  • BASE
  • Mix butter and sugar till creamy.
  • Add the egg. Sift the dry ingredients together and add to the mixture.
  • Press the mixture evenly into a greased baking tray. Place in the fridge for 15 minutes.
  • TOPPING
  • Beat the egg whites until it becomes a meringue texture (10 minutes).
  • Add the sugar and coconut gradually, keep beating.
  • Remove the base from the fridge. Spread the jam evenly over the base. Spoon the egg mixture over.
  • Bake at 180 degrees for 20-25 minutes.
  • Let cool and cut into 12 even squares.
  • Decorate to taste with cream, fruit and chocolate. (optional)
