When you have more time during the holidays to enjoy tea with your friends more often, you also have more time to make some great snacks. Sweet and savoury treats are both welcome and this jam and cheese muffins recipe combines them perfectly. It’s a super light and fluffy muffin recipe that already has the preserves and cheese inside, so you don’t need to set out more dishes unless you want to. It’s like scones and cheese muffins had a tasty wedding.

Jam and cheese muffins suggestions

These muffins have folded egg whites in the mixture which will keep them super light with the heavy extras. However, be aware not to overwhisk them or over-mix the muffin mixture. If you don’t like apricot jam, feel free to use anything from fig or strawberry jam, marmalade or even some more savoury onion preserve. You can also open them up, add some more jam or butter and top with whipped cream and fruit.

Ingredients

  • 2 2 eggs, separate egg yolks from white 

  • 2 cups 2 flour

  • cups milk

  • ½ cup ½ coconut oil

  • ½ tsp ½ salt

  • cups grated cheddar cheese

  • ¼ cup ¼ apricot jam

  • 2 tsp 2 baking powder

Method

  • Preheat the oven to 180°C / 356°F.
  • Grease a muffin tray with 12 muffin moulds with cooking spray or butter. 
  • Add the milk, egg yolks and coconut oil together and whisk well.
  • Sift the flour, salt and baking powder together and fold in, until well blended. 
  • Add 1 cup of grated cheddar cheese and fold carefully about 4 times. 
  • Whisk the egg whites until it makes a soft point and just frothy. Fold into the muffin mixture.
  • Spoon 2 tablespoons into each muffin mould until all are filled.
  • Sprinkle the leftover grated cheese on top and place ½ teaspoon jam in the middle of each muffin. 
  • Place immediately in the oven for 20 min until light brown and cooked in the middle.
