This moist and delectable cake is egg-free so it is also ideal for vegetarians. If you’re having guests, they will surely be impressed and you might find them visiting more often. So keep an extra delectable cake on-hand at all times along with your favourite roasts or tea.

Delectable coffee cake suggestions

The cake is light and fluffy with the air of coffee as the soft butter icing also brings a punch of mocha and you can also add some chocolate into the mix if you want to, even if you sprinkle it on top. If you want some extra decadence, a layer of caramel treat between each layer will do wonders and you can make square of round cakes with this recipe. Serve your coffee cake at birthdays, coffee time or just as a family treat to make everybody smile this winter.

Delectable coffee cake recipe

Ingredients

  • For the coffee cake
  • 3 cups 3 flour

  • 4 tsp 4 baking powder

  • ¼ tsp ¼ bicarb

  • 2 cups 2 sugar

  • 1 pinch 1 salt

  • 3 tbsp 3 coffee

  • 500 ml 500 hot water

  • ½ cup ½ oil

  • 1 tsp 1 vanilla essence

  • ¼ cup ¼ buttermilk

  • For the Icing
  • ½ cup ½ (125ml) butter/margarine

  • ½ tsp ½ vanilla essence

  • 3 tbsp 3 warm milk

  • 2 tsp 2 instant coffee

  • cups icing sugar

  • For the Icing Glaze
  • ¾ cup ¾ icing sugar

  • 1 tsp 1 instant coffee

  • Few drops of boiling water

Method

  • For the Coffee Cake
  • Add all the dry ingredients into a bowl and mix.
  • Now add in the liquid ingredients and mix well together until it forms a smooth batter.
  • Equally divide the mixture into 2 sandwich tins.
  • Bake for 20–25 minutes on 180°C.
  • Cool.
  • Now get ready for the icing.
  • For the Icing
  • Cream the butter until smooth, then add vanilla essence.
  • Mix together the coffee and the warm milk and add to the creamed butter mixture.
  • Add enough sifted icing sugar to get a smooth consistency.
  • Sandwich the cakes with the coffee icing and then spread over the top.
  • For the Icing Glaze
  • Sift in the icing sugar and then add the coffee.
  • Add a few drops of boiling water to get a pouring consistency.
  • Drizzle the glacé icing over the iced cake.
  • Enjoy
