Ice cream cake – For the die-hard ice cream lovers

Love ice cream enough to eat it in the heart of winter? Then this recipe is for you!

There are some of us who always have space for ice cream come rain or shine. That is why we have included this ice cream cake – for all the die-hard lovers of ice cream.

This delightful ice cream cake is quick and easy to prepare. Just ensure you have one litre of good quality vanilla ice cream, crunchy malt chocolate balls, chocolate, peanut brittle and chopped cherries. Each of these must be chopped in a food processor separately and mixed with a third of the ice cream.

Then place each layer in a plastic container on top of each other, decorate with chocolate shaves and cherries and place it back in the freezer.

If you want to create a thin crust for the ice cream cake, you can crumble 1 packet of digestive biscuits and mix it with 100 g melted butter and layer it first in the plastic container before you add the ice cream layers. When you turn the ice cream cake upside down out of the plastic container, you will have to flip it again so that crust is at the bottom.

Garnish with frozen berries if you have some on hand.

  • 1 litre of vanilla ice cream still frozen (good quality real ice cream)

  • 1 packet Mars Maltesers (crunchy, malty chocolate balls)

  • 100 g chocolate

  • 200 g peanut brittle

  • 1 cup chopped cherries

  • frozen berries (optional)


  • Chop the Mars Maltesers, chocolate and peanut brittle separately in a food processor.
  • Divide the ice cream into three. Place in three different bowls to melt slightly.
  • Line a plastic bowl with cling wrap, and let it hang over the edge slightly.
  • Mix each third of the ice cream with one of the ingredients: Mars Maltesers, chocolate and cherries, and
    peanut brittle.
  • Place the three different layers in the plastic dish. Decorate with cherries and shavers of chocolate. Cover and place back in the freezer.
  • Remove the ice cream from the freezer before serving; take it out of the plastic bowl by turning it upside down on a serving dish. Garnish with frozen berries (optional).
  • Cut into slices and serve with whipped cream.
