We all love a bit of pudding after dinner or lunch, right? When you’re a South African, you get used to the malva and date puddings alongside some chocolate desserts. However, you can make so many more great treats that you can enjoy during any weather with any meal. This sweet steamed ginger pudding is a great Sunday lunch recipe that will even make grandma proud, so you better invite her along for the flavour ride.

Sweet steamed ginger pudding suggestions

Similar to malva pudding the extra sweetness is added with apricot jam but you can experiment with the jam too and use a citrus jam or berries. This jam is also on both sides and when turned out, the bottom layer will still be running down the sides. You can cook it quickly in the microwave or longer on a double boiler. Like with malva pudding, you can serve it with some warm or cold custard, or with some vanilla ice cream for that contrast we all love so much.

Ingredients

  • 125 g 125 butter

  • ½ Cup ½ sugar

  • 2 cups 2 flour

  • 2 tsp 2 baking powder

  • 2 tsp 2 ground ginger

  • 4 tbsp 4 syrup or apricot jam

  • 2 2 eggs

  • enough milk to mix

Method

  • In a bowl cream your sugar and butter together until it becomes light and fluffy. Next, add eggs one at a time and mix into your butter mixture. Whisk together thoroughly.
  • Now comes the dry ingredients, add the flour, which you can sift. This is followed by baking powder and ginger. Add small amounts of milk until your mixture has a slight drop like consistency. Prepare your baking dish, which should be microwave safe, by greasing it with some butter or spray and cook. The dish you use should be about a 2.5-litre bowl. Preferably a dish that has a smaller bottom diameter.
  • Next, take 2 Tablespoons of your syrup or jam and place at the bottom of your dish. Take half of your flour mixture and spoon over the syrup or jam. Take another 2 Tablespoons of syrup or jam and spoon on top of the first mixture layer. Take the second half of the mixture and spoon onto the top of the syrup or jam.
  • You can then cover your dish with a layer of greaseproof paper and cover with cloth or muslin. We usually just placed an oven-proof plate over the dish. The cloth would work better, as the mixture swells. You can cook this Bain Marie style on the stove, but this will take about an hour and a half to cook.
  • For a faster method, place your dish into the microwave and let it go on full power for 4 minutes. Open the microwave and turn your dish around, then microwave a further 4 minutes. The mixture should be cooked when done.
  • Remove from the microwave and serve with cream, custard, or ice-cream. When serving the dish, you should flip the bowl when it comes out of the microwave onto a plate. So, the dish is now upside down. The pudding should then slide out of the dish or bowl, almost like an upside-down tart. When you remove the dish, the syrup or jam should run down the side, similar to crème caramel. You can then cut pieces, serve and enjoy.
