Honey roasted root vegetables make a delicious side dish to any meal. Instead of carrots you can use wedges of sweet potato, chunks of cauliflower or parsnips.

Interestingly enough all carrots used to white. Over time the changed to the orange variant we know today. White carrots are also good for digestion.

This recipe is the perfect way to incorporate vegetables into your next roast dinner, while still enjoying something delicious. Oven roasting the carrots intensifies the carrots.

Roasted carrots with a sweet and sticky honey glaze make the perfect side dish.

Ingredients

  • 1 kg 1 carrots

  • 2 tbsp 2 of olive oil

  • 3 star anise

  • 3 cinnamon sticks

  • 4 cloves garlic, unpeeled and slightly crushed using the edge of a large knife

  • salt and pepper

  • 60 g 60 of butter

  • 1 tbsp 1 of sherry or balsamic vinegar

  • 2 tbsp 2 of honey

Method

  • Preheat the oven to 190 degree Celsius.
  • Peel the carrots, I like to leave them whole, but halve any large ones length ways. Blanch in boiling water for 5 minutes.
  • Drain and transfer to a large baking sheet or roasting pan. The veggies must be in a single layer in the pan, or they’ll be soggy, steaming rather than roasting.
  • Drizzle with olive oil, season well with salt and pepper. Toss to combine.
  • Sprinkle over the star anise, cinnamon and garlic cloves. Roast for 30 minutes.
  • While the veggies are roasting, make the honey glaze. Melt the butter in a saucepan, stir in the honey and vinegar and heat until the mix is just bubbling.
  • Remove the roasting pan from the oven, turn the carrots over and drizzle the honey glaze over them.
  • Return to the oven for another 10 minutes, until tender and golden.
