When healthy food is mentioned, you always think of bland chicken, rice and maybe a few vegetables. But, did you know that you can still enjoy your chicken breasts with lots of flavour? This honey-glazed chicken breast recipe is perfect for those who want to upgrade their healthy meals to something more tasty. With a combination of sweet and savoury flavours, you’ll have perfectly cooked chicken breasts to add to your meal prep this weekend.

The recipe is easily adjustable if you are cooking ahead for the week and just make sure to count the sauce into your tracking if you are. They honey glaze isn’t too sweet and provides another layer to the succulent chicken. You don’t need to add extra sauce if you don’t want to and is a good reason to cook more chicken. Serve your glazed chicken breasts with a fresh green salad or roasted vegetables and some fluffy rice or crispy potatoes.

Ingredients

  • 500 g 500 chicken breast, boneless and skinless (2 large chicken breasts)

  • salt and pepper

  • 1⁄4 cup 1⁄4 flour

  • tbsp unsalted butter (or 2 ½ tbsp olive oil)

  • 2 cloves 2 garlic, minced

  • tbsp apple cider vinegar (or white or other clear vinegar)

  • 1 tbsp 1 soy sauce, light or all purpose

  • 1⁄3 cup 1⁄3 honey (or maple syrup)

Method

  • Cut the breasts in half horizontally to create 4 steaks in total. Sprinkle each side with salt and pepper.
  • Place flour in a shallow dish. Coat chicken in flour and shake off excess.
  • Melt most of the butter in a large skillet over high heat – hold back about 1 tsp for later.
  • Place chicken in skillet and cook for 3-5 minutes until golden. Turn and cook the other side for 3-4 minutes.
  • Turn heat down slightly to medium high.
  • Make a bit of room in the pan and add garlic and top with remaining dab of butter. Stir garlic briefly once butter melts.
  • Add vinegar, soy sauce and honey. Stir/shake pan to combine. Bring sauce to simmer, then simmer for 1 minute or until slightly thickened.
  • Turn chicken to coat in sauce. If the sauce gets too thick, add a touch of water and stir.
  • Remove from stove immediately. Place chicken on plates and drizzle over remaining sauce.
