Tortilla wraps are a great way to get around these issues. You can prepare your favourite breakfast ingredients, wrap them up and enjoy wherever you are. These Homemade Tortilla Egg Rolls are a great way to get all of your important morning nutrients in while enjoying every single bite.

Eggs take almost no time to cook and the rest of the ingredients are just popped onto each other before wrapping. Peppadews are a great sweet and spicy addition to this wrap. They are great with almost every egg dish and because they aren’t that spicy, just add some depth in flavour. Our Homemade Tortilla Egg Rolls have their ingredients set, but you can add whatever you want to your breakfast egg rolls. Add some cheese, bacon or jalapeño peppers, the choice is yours.

Homemade Tortilla Egg Rolls Recipe

Ingredients

  • 3 large eggs

  • 1 tsp mixed herbs

  • 1 tsp garlic salt, or garlic flakes

  • Salt and pepper to taste

  • 1 cup spinach, chopped finely

  • 4 peppadews, finely chopped

  • 2 flour tortillas (or wraps)

  • 2 tbsp sundried tomato paste

Method

  • Beat the eggs well. Add the mixed herbs, garlic salt and salt and pepper.
  • Spread the tomato paste on the two tortillas. Set aside.
  • In a large frying pan, heat 2 tablespoons of oil. When the pan is hot, add half of the egg mixture. When the edge of the eggs are cooked, about 1 minute, add ½ the spinach and ½ of the peppadews.
  • After 30 seconds, place the tortilla on top of the egg and gently press down with your fingers.
  • Using a spatula, flip the tortilla omelette over and cook for a minute to brown the tortilla.
  • Slide onto a plate and roll up.
  • Repeat the process with the remaining ingredients to make the second tortilla.
