Snickerdoodles are a timeless classic. They are similar to a sugar cookie just coated in cinnamon sugar for extra deliciousness.

Ingredients

  • 250 g 250 margarine

  • 1 cups 1 sugar (white or brown)

  • 2 large 2 eggs

  • 1 tsp 1 vanilla essence

  • 2 tsp 2 baking powder

  • 1 tsp 1 cream of tartar

  • 1 tsp 1 salt

  • 3 cups 3 plain cake flour

  • INGREDIENTS – COATING
  • ½ cup ½ brown sugar

  • 4 tsp 4 cinnamon

Method

  • To start, cream the sugar and margarine until it is fully combined with a whisk or stand mixer.
  • Mix in the eggs one at a time and add the vanilla essence.
  • In a separate bowl mix the sieved flour with the baking powder, tartar and salt.
  • Gradually add the dry mix to your wet while mixing.
  • Once combined you should have a thick, almost dough-like mixture. In a small bowl mix ½ cup of brown sugar and 4 teaspoons of cinnamon.
  • Preheat oven to 180˚C.
  • Take teaspoon-sized amounts of dough, roll into a ball, roll in the cinnamon mix and flatten. This is where a little helper might come in handy! You can flatten the balls with a fork for a nice pattern.
  • Space the cookies out on a greased tray and bake for 10-12 minutes.
