In South Africa, the humble lemon poppy seed muffin has become a real favourite and you can find them in most bakeries. They are so great because you can enjoy them on their own, but add either sweet or savoury toppings. Have you tried making your own homemade lemon poppy seed muffins?

If you’ve gone to a coffee shop and ordered almost any baked goods, you often get some butter, cheese and jam. These are all great on these poppy seed muffins but you can do so much more. The combination of different jam flavours like berries, apricot or strawberries adds great sweetness but gets even better with some cream. You can even enjoy the muffins with a sweet glaze or even with some bacon for a salty kick, because who doesn’t love bacon?

Ingredients

  • MUFFINS
  • 2 cups self-raising flour

  • 2 eggs

  • ½ cup squeezed lemon

  • ¼ cup lime juice

  • 4 tbsp nutritious shake

  • zest of 1 lime

  • ½ cup melted butter

  • 1 tsp baking powder

  • 80 ml poppy seeds

  • ICING
  • 1 tbsp lime juice

  • ½ cup icing sugar

  • 1 tbsp melted butter

Method

  • MUFFINS
  • Preheat the oven to 180°C  / 356°F.
  • Use Cook and Spray to grease a muffin pan or a ring silicone tray.
  • Sift all dry ingredients in a large bowl. Make a hole in the centre of the dry ingredients.
  • Melt the butter, add the lemon juice, and set aside to cool to room temperature.
  • Wisk the 2 eggs with a fork and add in the centre of the dry ingredients.
  • Add cooled melted butter, lemon and lime in the centre and start folding the mixture gently with a wooden spoon until well combined but ensure not to over-mix.
  • Place in prepared muffin pan or ring silicone tray. 
  • Bake in preheated oven for 12 minutes.
  • ICING
  • Mix melted butter, lime juice and icing sugar.
  • Drizzle over the muffins.
