When the hunger hits, you want a big sandwich that will make you happy and fed. Some sandwiches are so big that they can feed a few people. The great thing about South Africa is that we do like a big sandwich and none are more iconic than the Gatsby. These fully-loaded sub-style sandwiches are often made by street vendors in South Africa and loaded with everything imaginable and you can now make your own homemade ciabatta Gatsby.

Some sandwiches give you chips on the side but a Gatsby adds them right into the sub. You can even make your chips in the air fryer if you want to eat in less time. Our sandwich has steak and the usual salad ingredients like tomatoes and lettuce but you can get creative. Add some spicy chicken breasts or even pork belly onto your sandwich. The options are endless, as long as it’s fully-loaded with your favourite ingredients. You can even load-up a classic bacon, egg and cheese sandwich.

Homemade ciabatta Gatsby recipe

Ingredients

  • 1 1 ciabatta bread

  • iceberg lettuce, sliced thinly

  • ten g ten tenderised steak

  • olive oil

  • ½ cup ½ coconut oil (melted in microwave)

  • 6 6 large potatoes, peeled and cut into potato chips

  • Ketchup / tomato sauce

  • Tobasco sauce, mild or hot

Method

  • Preheat the oven to 190°C.
  • Place the chips in an oven pan and spread them evenly. 
  • Using a spoon, drizzle coconut oil over the chips and put in the oven. (You can also use a spray bottle)
  • Toss the chips a few times to ensure they bake evenly.
  • Place a skillet pan on high heat and add some olive oil.
  • Braise the steak both sides and cook according to your preference – rare, medium or well done.  Set aside and season to taste.
  • Slice the ciabatta bread in half, and half down the middle to form two long rolls.
  • Just before the chips are done, drizzle olive oil on the inside of the ciabatta bread and place in the oven to warm. 
  • Remove the chips from the oven when done.
  • Slice the steak in strips. 
  • Assemble your Gatsby
  • Fill the bread with sliced lettuce.
  • Place strips of steak on the sliced lettuce.
  • Add enough chips on top of the steak. Add Ketchup and Tobasco sauce and serve immediately.
