One of the most popular holiday biscuits are full of ginger goodness. These homemade gingerbread biscuits are soft or snappy according to your preferred taste and always welcome. The slight spice provides you with that “hmmmm” moment every time you tuck-in and dip it into your tea or coffee.

The great hing is that with the right timing, you can have slightly soft and chewy biscuits or more snappy gingerbread cookies. You can use various cookie cutters for that extra bit of flair as well as icing decorations to please your guests. These versatile biscuits can be shaped and decorated for any occasion and are most popular during the holiday season. Pack them up for great holiday gifts and enjoy them with your tea and good company.

Store bought ginger biscuits are simply not as good as those freshly home baked goodies, so why not make them from scratch today?

Ingredients

  • 250 g butter

  • 6 cups flour

  • 2 cups brown sugar

  • 3 tbsp ground ginger

  • 2 jumbo eggs

  • 1 cup golden syrup

  • 3 tsp bicarb mixed with 2 tablespoons milk

  • 1 pinch salt

Method

  • Cream the butter and sugar well for about ten minutes.
  • Add the eggs on at a time, mix after each egg.
  • The ginger and syrup, with the milk mixture, can now be added (that is the bicarb mixed in the milk) make sure that this is mixed well.
  • Sift flour and salt together and add to the mixture.
  • Mix to a soft dough.
  • Make little balls, roll in sugar place in the prepared baking tray. Take the bottom of a glass dip in the sugar and flatten the balls and bake in the oven at 180°C for 10 minutes if you like them softer or 20 minutes if you like them crispy. Adjust the oven cooler if needed.
