Camping outdoors is one of the most fun experiences you can have, especially with the great South African weather and great family. However, we often actually pack too much food and forget that leftovers are great for breakfast, If you had a braai on the first night, turn your leftovers into this boerewors and egg protein breakfast. Not only is it delicious, it keeps you satisfied for long busy days and helps you pack less for your trip.

Maybe you packed some extra bacon and a couple of eggs and adding some more local flavour is all you need which is where chakalaka and boerewors comes in. It’s time to get that “skottelbraai” going as the smell of cooking bacon and eggs is reignited as the best smell on the planet. With a recipe like this, you can adjust the amounts as easy as just adding depending on the size of your cooking surface and enjoy with the one or many people that came along to the weekend.

Boerewors and egg protein breakfast recipe

Ingredients

  • 4 4 eggs

  • 250 g 250 bacon

  • 300 g 300 boerewors or sausages of your choice

  • 410 g 410 chakalaka, mild & spicy 

  • sage or any other fresh herb to infuse the bacon

  • salt and ground black pepper

Method

  • Place a heavy based frying pan on medium heat.
  • Add the bacon in batches and sauté. Add fresh herbs and fry until crispy. Remove from the pan and set aside.
  • Add the boerewors and fry until cooked. 
  • Arrange the fried bacon around the boerewors.
  • Spoon the chakalaka in the pan with the boerewors and allow to heat.
  • Spoon spaces in the chakalaka and break the eggs carefully in these holes. Cover for a few minutes.
  • When eggs are done as you like them, season with salt and pepper.
  • Garnish with fresh herbs and serve immediately.
