We all love pancakes and flapjacks but you sometimes feel guilty if you have too much. However, pancakes can still fit your macros and help you stay on track with your nutrition plan. Our Healthy Protein Pancakes are made with oats and covered in fruit and yoghurt for one great meal. These pancakes are easy to make and you can get creative with the fruits you add for some variety. If you’re looking for a healthy breakfast or snack option, this is definitely the way to go.

The dry oats used adds good texture but most importantly, a bit of protein and lots of dietary fibre. Yoghurt bolsters the gut health properties of the meal and is just delicious with the addition of fruit. Our recipe uses strawberries but you can easily use fruits like peaches, kiwis, grapefruit, etc. You can eat healthy food and still enjoy every bite. Our Healthy Protein Pancakes are easy to make and perfect when you’re rushing out of the door or even just finishing a workout. Each serving is a light 314 calories.

Ingredients

  • ½ cup ½ dry oats

  • ½ cup ½ cooked oats

  • ½ cup ½ milk, low fat

  • ½ tsp ½ baking powder

  • 1 medium 1 egg

  • ½ cup ½ plain yoghurt, low fat

  • 1 cup 1 strawberries

  • 1 tsp 1 olive oil

Method

  • Put the oats in a blender and blend until it forms a fine powder. Add the cooked oats, milk, egg, and baking powder to the blender and blend until well combined.
  • Pour the mixture into a squeezy bottle with a narrow spout.
  • Brush a frying pan with the olive oil, and place on medium heat.
  • Squeeze 2 cm circles onto the frying pan. Once bubbles form on the mini pancakes, flip them to cook the other side. Repeat until all the mixture is finished.
  • Serve with yoghurt and strawberries.
