Do you love soup with family as much as we do? Soups are great as main meals but also great, light starters or snacks if you don’t want to eat too much or get people ready for more food. This is especially true with vegetable soups which are light and often nice and creamy. Our healthy broccoli soup is no different and is very easy to make. It’s great for a night in with the family too as the winter months creep towards us.

Making your healthy broccoli soup

Broccoli is filled with great nutrients like iron and calcium which are important for your immune system and bones. The vitamins and minerals double down on the healthy goodness. We are making it a bit richer with a creamy roux or white sauce. When making your roux, the butter and flour goes into the pot first and stirred together until the flour smell goes away. Then slowly and gradually adding the milk and cream to prevent lumps while continuing to stir. This soup enjoys lots of black pepper and good seasoning to bring out the deep flavours.

Healthy broccoli soup Recipe

Ingredients

  • 5 tbsp 5 butter

  • 1 1 onion, chopped

  • 1 1 stalk celery, chopped

  • 2 2 carrots, chopped

  • 3 cups 3 chicken broth

  • 2 2 heads of broccoli (medium size)

  • 3 tbsp 3 all-purpose flour

  • 1 cup 1 milk

  • 1 cup 1 cream

  • ground black pepper to taste

Method

  • Melt 2 tablespoons butter in a medium-sized pot and sauté the onion, celery and carrots until tender. 
  • Add the broccoli and chicken broth, cover and simmer for 15 minutes.
  • Use a stick blender and carefully pulse the mixture a few times to get the soup moving before leaving the blender on to make a puree. Puree in batches until smooth.
  • In a small saucepan over medium heat, melt 3 tablespoons of butter, stir in the flour and gradually add the milk and cream. Stir until thick and bubbly, and add to soup. 
  • Garnish with cream (optional) and season with pepper.

Notes

  • Serve hot or cold with bread.
