Sometimes, you need some easy dishes to go along with your braai this weekend so that you can spend all of your time with the ones you care about. With this easy green bean and cashew salad with cranberries recipe, you’ll have a lovely fresh side dish that takes minimal effort when providing great flavour and nutrition. You can even grill the beans and toast the cashews for some extra flavours with some extra feta if you’re feeling adventurous.

Ingredients

  • 500 g 500 young green beans, trimmed

  • 30 ml 30 olive oil

  • sea salt and freshly ground pepper

  • For the dressing
  • ½ cup ½ fresh thyme

  • 3 3 cloves garlic

  • juice of 1 lime

  • salt and ground pepper

  • 1 tbsp 1 olive oil

  • 1 tsp 1 Tabasco green pepper sauce

  • For the garnish
  • 1 cup 1 cashew nuts

  • 1 cup 1 cranberries (fresh or dried)

  • herb rocket leaves

Method

  • Place the trimmed green beans in boiling water, let them simmer for 5 minutes. Drain immediately and rinse with cold water.
  • Grind the fresh thyme and garlic, combine with the lime juice, olive oil and Tabasco green pepper sauce. Season to taste.
  • Arrange the green beans, cashew nuts and cranberries on a salad serving plate, sprinkle with the dressing and rocket salad.

Notes

  • Serve hot or cold.
