The last weekend in May might have National Burger Day in the USA but that doesn’t mean that we can’t enjoy this delicious sandwich all over the world and try a range of cuisines. This Greek-style mushroom burger recipe combines your love of burgers with a meaty mushroom theme with all kinds of healthy vegetables that will keep you on track with your nutrition. Who said you can’t have the tastiest burger you’ve ever had and not be healthy, right?

Greek-style mushroom burger suggestions

The mushroom and mince patty is as meaty as you remember and actually helps if you’ve not got enough mince for everybody. The patties are well seasoned and tender with a beautiful caramelized crust on the outside if you give it enough heat. You can also fry some mushrooms to put on top too. You’ve got loads of protein, fibre, Vitamins and minerals with just a bit of carbs to make you happy. Remember to toast your buns with some butter for extra flavour and crunch. Serve your burger with some sweet potato or zucchini fries and maybe some onion rings.

Ingredients

  • 40 g 40 fresh tomato

  • 12 g 12 fresh parsley

  • 300 g 300 beef mince

  • 300 g 300 button mushrooms

  • 1 slice 1 stale white bread

  • 1 medium 1 onion

  • 3 ml 3 dry oregano

  • 1 pinch 1 ground cinnamon

  • 1 pinch 1 ground cumin

  • 2 tsp 2 olive oil

  • 1 ml 1 baking powder

  • 1 pinch 1 salt

  • To serve
  • 2 2 toasted sesame seed buns

  • side salad and/or zucchini fries

  • 2 tbsp 2 tzatziki to spoon over the patties

Method

  • Drench the slice of bread in water or milk – put aside.
  • Grate the tomato & finely chop the parsley – put aside.
  • Roughly chop the mushrooms and flash fry without oil until the moisture is cooked out – put aside.
  • Fry onions in olive oil until soft – put aside.
  • Add the cooked mushrooms, onion, bread, spices, herbs, baking powder, chopped tomato and parsley to the raw mince. Add seasoning to taste.
  • Mix by hand ensuring ingredients are well distributed.
  • Form the burger patty and refrigerate for 30 minutes.
  • Grill or fry patty.
  • Build your burger, with some tzatziki on the patty, in any order and serve with zucchini fries.
