The classic chicken and mayonnaise is a meal that’s enjoyed all around the world. Who knew that you could make so many people happy with just a few simple ingredients? It’s also a great idea when you have some leftover chicken and some odds and ends in the kitchen. However, leftovers doesn’t mean that you can’t make something worthwhile. Our gourmet lemon chicken mayo sandwich is as tasty as it looks and you’ll want to make it more often.

Gourmet lemon chicken mayo tips

The recipe is great with bread rolls instead of sliced bread. If you want to make it even more decadent and fancy, add some butter into a pan and fry the bread with the butter for some flavour and crunch. The lemon adds some great zest to the sandwich and while the gherkins are also picked and double-down on the punch of flavour. You can also add some sliced jalapeño poppers if you you want to add some heat.

Ingredients

  • 1 cup cooked chicken, shredded

  • 1 onion, finely chopped

  • 1 carrot, peeled and finely grated

  • 2 gherkins, finely chopped

  • 1 sprig fresh thyme, stem removed

  • juice of 1 lemon

  • 4 tbsp mayonnaise

  • salt and pepper

Method

  • Fry the onion in a little oil until soft and translucent.
  • Combine carrots, gherkins, fresh thyme and cooked chicken in a bowl.
  • Add onion, mayonnaise and lemon juice.
  • Mix all together and season with salt and pepper.
  • Serve on bread of your choice.
