Everybody loves a good cup of tea or coffee, but there is one way to always improve your favourite brew. Any sort of cookie, biscuit or rusk is always a welcome addition to this party and we have a special one for you. These Golden Oat Crunchies are the way to go. They’re sweet and crunchy, just like it says in the name. They’re not just great for home, but wrap them up this holiday season and they make a great gift.

The best part of this recipe other than the taste and crunch is that you probably have all of these ingredients at home already. The oats and coconut add to the crumbly crunch of these cookies. Honey and brown sugar add to the gold colour and delicious sweetness. As Halloween is also here, you can easily decorate these beauties with some icing sugar and other spooky decorations and surprise your guests. These Golden Oat Crunchies are perfect for tea-time or as a holiday gift.

Golden Oat Crunchies Recipe

Ingredients

  • 200 g butter

  • 1 tablespoon golden syrup (or honey)

  • 2 cups oats

  • 1 cup coconut

  • 1 cup flour

  • ¾ cup brown sugar

  • 1 teaspoon bicarbonate of soda

Method

  • Preheat the oven to 180°C.
  • Mix the flour, oats and coconut in a bowl.
  • Melt the butter, syrup and sugar in a small pot.
  • When the butter starts to bubble add the bicarbonate of soda and stir. Remove from the heat immediately.
  • Pour the butter mixture into the dry ingredients and mix with a spatula.
  • Using the back of a metal spoon, gently press the mixture into a greased baking tray (30 cm x 20 cm or similar depending on how thick you like the crunchies).
  • Bake for 15 minutes at 180°C, then turn the oven down to 160°C and bake for a further 10 minutes until golden brown.
