Gingerbread Muffins with Lemon Glaze – Super moist and tasty

Soft, fluffy and flavoured with warm ginger and cinnamon spices, that is the best description for these gingerbread muffins. If you are looking for a rich, tasty winter snack, these spicy-flavoured muffins are just the right treat.

The pungent flavour of ginger and cinnamon reminds of our cold winter weather storming outside while enjoying a comforting winter snack in front of a roaring fire.

To make these gingerbread muffins even more enjoyable, a zesty lemon glaze recipe is included. Simply drip the shiny glaze over the cooled muffins and make yourself ready for a flavour packed feast.

This winter, cosy up on the coach with your favourite hot beverage with some deliciously soft gingerbread muffins.

Ingredients

  • Muffins
  • cups all purpose flour

  • 3 teaspoons 3 baking powder

  • 3 teaspoons 3 ground ginger

  • teaspoons ground cinnamon

  • 1 cup 1 brown granulated sugar

  • pinch pinch of salt

  • 2 large 2 eggs

  • ½ cup ½ butter or margarine, melted

  • 1 teaspoon 1 vanilla essence

  • 1 cup 1 milk

  • Lemon Glaze
  • 1 cup 1 icing sugar

  • ½ teaspoon ½ ground ginger 

  • juice of half a lemon

Method

  • Preheat oven to 200°C.
  • Sift flour, baking powder, ginger and cinnamon in a large bowl. Add in the sugar and salt and stir till combined.
  • In a separate bowl, whisk together the eggs, melted butter, milk and vanilla.
  • Add the wet ingredients to the dry mixture and stir until just combined. Be careful not to over-mix. 
  • Prepare a paper-lined 12-cup muffin tray.
  • Spoon the batter into the muffin tray, filling each till three-quarters full.
  • Bake for 20 minutes.
  • Remove muffins from tray and let cool on a wire rack.
  • For the lemon glaze, combine all the ingredients into a bowl and mix together till smooth and a bit runny.
    Once muffins are cool, drizzle the lemon glaze over each muffin with a spoon.
