Ingredients

  • 7 7 gem squash cut into halves

  • 1 bunch 1 spinach washed and chopped

  • 2 tablespoons 2 butter

  • 1 teaspoon 1 crushed garlic

  • ½ ½ onion cut and chopped

  • 1 teaspoon 1 zesty lemon and herb

  • 125 ml 125 fresh cream

  • 2 tablespoons 2 flour

  • salt to taste

  • 250 ml 250 milk

  • 1 litre 1 water

Method

  • In a pot add 750 ml water and simmer the gem squash until soft. Remove from the heat, drain the water and set aside.
  • In a pot, add the garlic, onion, chopped spinach and water and allow it to simmer for 5 minutes and drain the water.
  • In a separate small pot, heat the milk until hot and set it aside.
  • In a separate pot, heat the butter and add the flour, lemon zest and herbs and whisk well for 2 minutes.
  • Add the hot milk and whisk until well combined. Add the spinach, mix well and add the cream. Simmer for 4 minutes, add seasoning to taste and remove from the heat.
  • Stuff the gem squash with the creamy spinach and serve.
