If you’re looking for something easy to cook for your family tonight, chicken is often the answer. Everybody enjoys some chicken and the classic lemon and garlic flavours. This garlic and lemon chicken recipe is perfect for the whole family and is quick to make. Lemon has a way of flvaouring tender chicken without overpowering the great chicken taste. Garlic is always necessary and a staple of a tasty casserole.

Garlic and lemon chicken tips

When frying your chicken to add some colour, do it in the casserole dish you will be using so that you don’t lose any of that taste. The wine not only flavours the chicken but will help deglaze and scrape up the tasty browned bits on the bottom of the pot. You can serve your chicken casserole with roast vegetables or a tomato and onion sliced salad with vinegar dressing.

Ingredients

  • 1 whole 1 chicken (jointed into pieces) or ready-separated pieces

  • 3 cloves 3 crushed garlic

  • 2 2 bay leaves

  • 1 large 1 onion, chopped

  • 1 1 lemon

  • 2 cups 2 wine

  • 2 2 egg yolks

Method

  • Joint chicken and marinate for at least 12 hours in enough white wine to cover pieces
  • Fry marinated chicken, onion, garlic, in butter until well browned and tender.
  • Add wine, marinate if chicken becomes too dry.
  • Place chicken in casserole dish.
  • Add juice of 1 lemon, 2 egg yolks beat well with fork.
  • Place casserole dish in pre-heated 180°C oven for 20-30 minutes.
  • Add chopped parsley just before serving.
